Green Bean & Corn Casserole

Several requests for Jan's modified green bean & corn casserole, one
from someone who wasn't at either MoFest. This stuff is gooood!

Jan's Green Bean & Corn Casserole

Layer each of the following in order, in a greased 13x9 cake pan:

1-1/2 cups crushed Ritz Crackers
2  14oz cans French style green beans, drained
1  14oz can Shoe-peg (sp?) corn
1  can water chestnuts, sliced
1  small onion, chopped fine

Then, mix 1 14oz can cream of celery soup with 8 oz of sour cream
and layer on top of the onions.

1  cup shredded cheddar cheese (I prefer extra sharp)
1-1/2 cups crushed Ritz Crackers
1  stick of melted butter

pre-heat oven to 350 and bake for 30-35 minutes.

Here is one I love. It is a Sourtern recipe to boot. It even has more than 3
ingredients.

                    GREEN BEAN AND ARTICHOKE CASSEROLE

  Amount  Measure       Ingredient -- Preparation Method

  2           packages  Frozen green beans
  1            package  artichoke hearts
     1/2           cup  extra-virgin olive oil
     1/2           cup  Italian bread crumbs
     1/2           cup  fresh grated Parmesan cheese
  1                     onion -- finely diced
  3             cloves  garlic -- minced (6 to 8)
                        Salt and freshly ground black pepper to
                        taste

 Blanch the green beans in boiling salted water for about 5-7 minutes, or
until tender. Medium-dice the artichoke hearts.

Saute the onions and garlic in the olive oil. In a large bowl, mix the
beans, bread crumbs, cheese, hearts, and the oil with the onions and
garlic. Season liberally with black pepper; salt to taste.

Put the mixture into a 9"x14" baking dish, and sprinkle the top with
additional bread crumbs and cheese. Bake at 350 for 20 - 30 minutes.


Notes: I also added 1 rib celery sliced, 1/4 bell pepper 1/2" dice,
toasted slivered almonds.
